PROVIDENCE, R.I. — A new chapter is beginning for one of Rhode Island’s most iconic eateries. The Toprak family, longtime owners of Baba’s Original New York System, have announced that the restaurant will continue under new management by the Quintana Family, marking the next phase for a local favorite that has served generations of Rhode Islanders.

The Quintana Family, proud members of the Smith Hill neighborhood, will keep serving the community under the restaurant’s updated name, Hillside Original New York System. Customers can expect the same friendly service, beloved menu, and welcoming atmosphere that have made the spot a Providence staple. They are also bringing back a customer favorite: late-night hours.

Owners Saul and Summer Quintana said they are excited to continue the tradition of great food and strong community connections. The Toprak’s encourage customers to welcome the new owners with the same warmth they have shown for years, saying they are confident that “you’ll come to love them just as much as you’ve loved us.”

The transition represents continuity rather than closure. Hillside Original New York System will carry forward the flavors and spirit that have defined Rhode Island’s food culture for decades. As the Baba’s Family wrote, “This isn’t goodbye; it’s the continuation of a story that began right here, with all of you.”

Here is the full statement from Baba’s which closed under that name on October 31:

“To our valued customers,

The Baba’s Family is proud to announce new management taking over at Original New York System!

While it may feel like the end of an era, the era is not ending with Baba’s — it’s continuing with the Quintana Family. We are honored to pass the torch to them as they carry forward the legacy, traditions, and heart that have made this place so special.

The Quintana Family, proud members of the Smith Hill neighborhood, will continue serving right here at The Original New York System, now proudly named “Hillside Original New York System.” They’re excited to bring their own passion and community spirit to the place you’ve always loved.

They’ll be picking up right where we left off last Friday – ready to serve you with the same warmth and dedication that have always defined this spot. And for those who have missed it, the late-night hours are coming back!

We ask our cherished customers to welcome the Quintana Family with open arms and the same love and support you’ve shown us throughout the years. We truly believe you’ll come to love them just as much as you’ve loved us.

Come meet the new owners, Saul and Summer, and join us in celebrating this new beginning for a Rhode Island classic.

From the bottom of our hearts, thank you for your loyalty, your memories, and your kindness. This isn’t goodbye — it’s the continuation of a story that began right here, with all of you.

With love and gratitude,
Baba’s Family”
